Stillwater Bachelor's Potato fry
This recipe is a local special in Stillwater, Oklahoma among the malayali bachelors pursuing their graduate studies. Pioneered by Subbu, and enjoyed by all this simple, tasty recipe follows..
Potato 2 medium, cubed
Sambhar powder 2 TBSP or as per one's spice level
Salt as needed
Oil 2 tsp
Method
Heat oil in a wide mouth non stick pan at med-high heat. Add the cubed potato and cook on high flame for 5 minutes. Reduce the flame to med and cook covered until the potato is 80% cooked. Remove lid, add salt and sambhar powder, incorporate well and cook uncovered until crispy and golden brown.
